Dropped in this afternoon to Pilot Coffee Roasters in the Manulife Centre, for a coffee break before taking on the 3.5 hour-long film, The Brutalist. The shop is on the ground floor of the centre and very close to the escalators to the cinema. It was clean, organized with lots of seating and free WiFi from the Manulife Centre. My partner and I both had Americano coffees (wish they should call them "Canadiano coffees" instead) (LOL) and I had a slice of Lemon Loaf as well. The coffee and the lemon slice were great, but even better than that, was the vibe and staff interaction with customers. The team on duty comprised of three young people, all of whom were pleasant, engaging with customers, professional and pleasant to deal with. They greeted each customer as they entered the coffee shop and promptly filled their order. They all also said "Thank You" to their customer. The excellent customer service was a pleasant surprise as many coffee shops or any type of service businesses struggle to find and retain pleasant and enthusiastic staff. Pilot is one of our favourite coffee roasters. That said, the quality of lattes can vary depending on the barista. After a disappointing one at this location, the barista kindly offered a replacement and it truly lived up to Pilot’s usual standard. Appreciate you standing by your commitment to quality!

Went to this coffee shop, and didn’t even get coffee. Is that blasphemous?! Am I cancelled?! Regardless, Pilot Coffee has one of the best hot chocolates in the area. You gotta use the real milk from the cows, in my opinion, for optimal hot chocolate taste. Again, real milk could be another controversial take, but I’m throwing it out there. Also, throw in a chocolate chip cookie with sea salt cuz it’s huge, tasty, and the same price as the other cookies. In this case bigger really is better!

Love how oat-y the oat milk latte is! The staff are friendly and efficient. The space is sleek, minimal, and great for crowd control (especially on busy weekday mornings): in one entrance and exit out the other. Lots of seating available just outside the shop, and in the Manulife Centre. There’s also a selection of baked goods and non-caffeinated beverages.

Best matcha in town. They don't mess around. So many coffee shops use low grade mixes. Had in an almond milk latte unsweetened. Perfect.

I’ve been to pilot at Younge And St Clair a couple times. The first drink I ordered was was a Matcha ice Matcha latte with oat milk like some of the best Matcha I’ve ever had. I’d like how they mix some Matcha in front of you in a clear bowl ice touch The other Matcha the second drink I had was a tropical fruit matcha delicious so refreshing and then I had a pistachio loaf very good little pricey, but I feel like the Matcha is good quality

Pilot Coffee has shops all around town. This location is in the Manulife Centre, which also contains a few other third wave coffee shops. I find Pilot's coffee to be very smooth and easy to drink. It's more of an overall pleasant coffee-sipping experience than some comparables, although perhaps less distinctive as a result. The staff are trained to ask you if you want any "food or beans" when you check out, and I'd recommend taking a look at their coffee bean options. I like to treat myself once in a while with a fresh bag from Pilot. Overall, Pilot is a solid coffee option for the area. Nothing groundbreaking, just high quality, tasty cups of joe.
